1 Minute Muffin

Talk about a quick breakfast--this is the ultimate quickie! It's extremely forgiving, and can use just about any floury substance, and any flavor add ins! The 1 Minute Muffin is one of my daughter's favorite breakfast foods--and mine as well!

​Ingredients for Muffin:
  • 1/4 cup ground flax meal
  • 1 tsp coconut oil
  • 1 egg
  • Shredded, unsweetened coconut
  • 1/8 of a medium banana, mashed

Toppings:
  • Dash of cinnamon
  • 6-8 slices of banana
  • Shredded, unsweetened coconut
  • Almond butter
  • Honey

To Make Muffin:
In a microwavable mug, melt coconut oil
With a fork, whisk in the egg
Stir in the flax meal, shredded coconut, mashed banana
Microwave for 1 minute
Tip mug upside down to remove muffin
Slice in half, top as you like
