Beet Root Smoothie Bowl

Ok, so here's the thing about beets. Most people think they taste like dirt. I, however, love them. My taste buds must be very sophisticated....or "earthy".
When you steam and freeze them--they're incredible in smoothies! Not to mention that color....Pinkalicious (as my daughter would say)! The only big drawback in that color is the outcome. Literally.  It can turn your poo red--so remember that when you wake up the next morning thinking you suddenly need a trip to the ER...
Beets are one of the richest sources of Glutamine--assisting in the maintenance of your intestinal tract. Very rich in fiber, and folic acid, their antioxidants can be absorbed by eating raw, steamed, pureed, pickled, etc. 

Smoothie Ingredients:
  • 1 steamed and frozen beet root (I don't peel mine)
  • 1 flower steamed and frozen cauliflower
  • 1 frozen banana
  • 1 1/2 tsp good vanilla (I use 100% pure I just brought back from Mexico)
  • 1 TB almond butter
  • 1/3 cup unsweetened almond milk (or any non-dairy milk)
  • 2 TB raw cashews
  • 1 scoop collagen peptides (I used unflavored Vital Proteins)
  • 1 TB 100% cacao nibs

Smoothie Toppings:
  • Pomegranate seeds
  • Raspberries
  • Unsweetened flaked coconut
  • Toasted buckwheat kernels 
  • Melted 100% cacao, unsweetened 

I usually microwave my frozen ingredients for about 20 seconds to soften them up just slightly--this helps to make the texture perfectly creamy! Enjoy, friends :)
