Carrot Cake Energy Balls

Yield: 8-10 balls

Ingredients:
  • 2 TB chia seeds
  • 3/4 cup raw walnuts
  • 1/3 cup unsweetened shredded coconut
  • 7 pitted dates, soaked in warm water
  • 3 TB ground flax meal
  • Zest of 1/2 an orange
  • 1 TB honey or agave syrup
  • Zest 1 carrot
  • Pinch of lemon zest
  • Pinch of salt
  • 1 tsp vanilla
  • 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp cardamom

Directions:
  • Pulse all ingredients in food processor until a sticky dough forms
  • Roll into balls
  • Roll in extra shredded coconut mixed with orange zest
  • Freeze and store in airtight container for 1-3 months
