Layered Coconut Chia Pudding

This is something that I make for my husband the night before early work mornings, so I don't have to get up earlier than the kids do just to make sure he actually eats something healthy! It's super forgiving, and you can easily omit the yogurt and replace with a smoothie, or a non-dairy yogurt for other dietary restrictions.

Ingredients;
NF Greek Yogurt
3 TB Chia Seeds
1/3 cup non-dairy milk
1 tsp good vanilla
2 TB shredded, unsweetened coconut- plus extra for layering
1 TB honey
Toasted buckwheat kernels
Sliced kiwi
Pomegranate seeds

To Make Chia Pudding:
Combine chia seeds, vanilla, honey, and coconut shreds and non-dairy milk in a bowl, mixing well Refrigerate for at least 15 minutes, until pudding sets up
Layer with greek yogurt and coconut shreds, fruit, and kernels to taste
Can store in refrigerator overnight
