Salad Rolls & Ginger Carrot Dipping Sauce

Ingredients for Salad Rolls:
  • Rice paper
  • 1 carrot, julienned
  • 1/2 cucumber, julienned
  • 4 radishes, sliced
  • 1 peeled & julienned jicama 
  • 1 avocado, sliced
  • Bib lettuce leafs 
  • Black sesame
  • 1/4 cup rice wine vinegar
  • 3 TB soy sauce, low sodium
  • Crushed red pepper
  • 1 tsp chili garlic paste
  • 2 TB fresh grated ginger root

To Make Salad Roll:
Combi
ne last 5 ingredients in a bowl
Soak all veggies except the avocado in the mixture for at least 30 minutes
Soak rice paper in warm water for 10-20 seconds, until playable but not stretchy
Stack ingredients inside rice paper, roll like a burrito & slice in half

Ingredients for Dipping Sauce:
  • 1 peeled chopped carrot
  • 1/2 peeled chopped ginger root
  • 1/4 bunch cilantro
  • 2 cloves peeled garlic
  • 3 TB low sodium soy sauce
  • 1/2 tsp sesame oil
  • Juice from one lime
  • 2-3 TB dry roasted, unsalted peanuts
  • 1 TB chili garlic paste

To Make Dipping Sauce:
Simply blend everything together--easy peasy!
