Salted Dark Chocolate Peanut Butter Cups

Time: 30 minutes
Yield: 18 large cups
Fun Treat

Ingredients:
  • 2 packages dark chocolate chips (at least 60% cacao)
  • 2-4 TB toasted buckwheat kernels
  • 1/3 cup raw chopped walnuts 
  • 2 TB coconut oil
  • Flaked sea salt
  • 3/4 cup peanut butter (homemade is best to ensure no added oils)
  • Muffin liners

Directions:
  • In saucepan over medium-low heat, melt coconut oil
  • Pour chocolate chips into melted coconut oil and turn off heat, stirring until completely melted
  • Pour all but a handful of chopped nuts in, stir to combine
  • Lay out muffin liners on a plate, pour melted chocolate in--just enough to cover the bottom
  • Freeze 5 minutes, or until set
  • Add dollop of peanut butter on top of frozen chocolate layer, sprinkle with toasted buckwheat kernels and freeze again 5-10 minutes
  • Cover with remaining melted chocolate (reheat as needed), sprinkle with remaining walnuts, and flake sea salt over the top
  • Freeze again prior to putting in airtight container and store in freezer. Thaw to enjoy :)
