Traditional Biscotti

Time: 1-2 hrs (depending if kids are helping or not)
Yield: 2 full cookie sheets
Fun Treat

Ingredients:
  • 4 eggs, separated
  • zest of 1 orange
  • 4 cups flour
  • 2 1/2 cups sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp anise extract or oil
  • 1 cup blanched slivered or sliced almonds

Directions:
  • Whip egg whites until stiff peaks form
  • Add sugar, zest, vanilla, anise, and yolks
  • Using a dough hook on your cuisinart, add flour, 1 cup at a time, with baking powder
  • Dough will become extremely tough
  • Add almonds, mix again, scraping sides down
  • Place dough on floured surface, knead a few times, cut into fist sized pieces
  • Roll each piece into log, placing on greased and floured cooking sheet
  • Bake at 425 degrees for 10-15 minutes, until lightly browned and crackled on top
  • Remove from oven, cool 10 minutes remove from cooking sheet
  • Turn heat to 325
  • Cut each log on bias into 1/2" thick pieces placing back on cooking sheet
  • Bake at 325 for 10 more minutes, cool on rack
  • Store in airtight container for up to a month
